- 01 – 02 Tbsp. minced garlic
- 01 Tbsp. lemon juice
- 01 package boneless skinless chicken breasts
- 01 – 02 C grated parmesan cheese
- 01 stick butter
- 01 Tbsp. minced garlic
- 1 1/2 Tbsp. lemon juice
Soak toothpicks in a bowl of water. You’ll need about three per breast.
Make a horizontal slice in the middle of each chicken breast about 3/4 of the way through. I actually cut each breast in half first to make them smaller.
Drizzle olive oil over chicken and rub it in, including inside the cut.
Season with salt, pepper and paprika.
Sprinkle with minced garlic.
Drizzle lemon juice over top.
Toss the chicken to spread the seasonings evenly over the outside and inside the cut.
Let set for at least 10 minutes.
Meanwhile, start a grill for direct high heat – about 400 degrees.
When grill is ready, stuff each breast with grated parmesan and fasten with toothpicks.
Grill over direct high heat with the cover closed for 05 minutes.
Meanwhile, melt the butter in a sauce pan with the lemon juice and minced garlic.
Turn the chicken and grill another 05 minutes or until cooked through.
Remove from grill and let set about 02 – 03 minutes.
Remove toothpicks, pour lemon butter over chicken and serve.
