Baked Ocean Perch

Being from Michigan, I am quite familiar with lake perch.  My ex-father-in-law would fish every day of the year, bring home a big bucket of perch and clean them at the kitchen table while I grimaced and made weird faces.  Mom would deep fry them and serve them with her homemade cole slaw and fries.  Now that I’m a South Carolina girl, instead of freshwater fish, I’m blessed to have access to ocean seafood. Hence, last night’s ocean perch.  Here’s what I did with it:Baked Ocean Perch

  • 08 ocean perch filets
  • 02 small tomatoes
  • 01 lemon, sliced
  • kosher salt
  • ground pepper
  • paprika
  • olive oil
  • 01 stick of butter
  • 01 Tbsp. lemon juice
  • zest of one lemon
  • 02 Tbsp. minced garlic

Combine butter, lemon zest, lemon juice and garlic in a sauce pan. Bring to a simmer.

Rub olive oil on both sides of filets and the bottom of baking pan. Season fish with salt, pepper and paprika. Layer lemon slices on bottom of pan, followed by filets and tomato slices.

Baked Ocean Perch Prep

When sauce is melted, pour over fish.

Bake at 350 degrees for 15 minutes. Broil for an additional 10 minutes. Spoon sauce over fish and serve.
