Mom’s Pork Chops and Butter Beans

My mom, like her parents, was a remarkable cook.  Even though we were poor and couldn’t afford many of the “gourmet” type of foods, she was still able to brew up some incredible dishes.  This is one of them.

Pork Chops and Butter Beans

Ingredients

  • 04 bone-in pork chops
  • 02 onions – sliced
  • 02 cans butter beans
  • 02 cans tomato soup
  • 01 tsp. garlic powder
  • 01 Tbsp. brown sugar
  • 01 Tbsp. Worcestershire sauce
  • kosher salt
  • pepper
  • garlic powder

Pork Chops and Butter Beans Prep

Directions

Combine tomato soup, garlic powder, brown sugar and Worcestershire sauce in a bowl.
Season chops with salt, pepper and garlic powder.
Brown chops in a skillet.
Place chops, onions and beans in a baking dish
Cover with tomato soup mix.
Bake at 350 degrees for 30 minutes, covered; 30 minutes, uncovered.
