Pan Fried Pork Chops with Balsamic Glazed Tomato and Onion Sautee

It was a “clean out the fridge” dinner night. The kids all ate different dishes. One had waffles, one ate soup, the other had potato pancakes. Honey was going to polish off some left-overs, but when he smelled my dinner cooking, he decided to eat what I was having. I had one tomato, one onion and a few pork chops that needed to be cooked before they spoiled. This is what I created:

Pan Fried Pork Chops with Balsamic Glazed Tomatoes and Onions

Ingredients

  • 01 small tomato
  • 01 small onion
  • 02 Tbsp. olive oil
  • 02 Tbsp. balsamic vinegar
  • 01 Tbsp. sugar
  • 01 Tbsp. dried basil
  • 1/2 tsp. kosher salt
  • 1/8 tsp. ground pepper
  • 04 bone in pork chops
  • olive oil
  • kosher salt
  • ground pepper
  • garlic powder
  • paprika

Directions

Rub chops with olive oil.
Season with salt, pepper, garlic powder and paprika.
Set aside.

Pan Fried Pork Chops with Balsamic Glazed Tomato and Onion Sautee Meat

Combine olive oil, balsamic vinegar, sugar, basil, salt and pepper.
Whisk to combine.
Slice onion.
Chop tomato into wedges.
Pour sauce over tomatoes and onions in a bowl.

Pan Fried Pork Chops with Balsamic Glazed Tomato and Onion Sautee Prep

Heat some olive oil in a large pan on high heat.
When the oil is hot, add the chops and brown, about 03 – 04 minutes per side.
Add about 01 Tbsp. of water to the pan, cover and continue to cook until chops are no longer pink, about five minutes.
Transfer chops to a plate and cover with foil.

Add the onions to the pan and sautee until soft, about 03 – 04 minutes, scraping up browned bits.
Add tomato and continue to cook until soft, about 03 minutes.

Serve the pork chops with sauteed tomato and onions over top.

  1. With your help, the chops were knocked out of the park. And lost….in bellies!

    They moaned about this. I used a red onion, and else, really didn’t sub/swap anything. To compliment the chops, I did a creamy mashed potato casserole, and sauteed broccoli.

      • I did not follow until on redwings website talking about some going back to play on griffins for cup and offer to watch the finals for free, yes that is correct free. I could not believe it but it is true.
