Steak Fajitas!

Who doesn’t love steak fajitas? Yummy stir fry in a tortilla. Cheese, sour cream, veggies, meat… heaven. Here’s what I ate tonight:

Steak Fajitas

  • flank steak, cut into strips
  • 01 onion, sliced
  • 01 green pepper, sliced
  • 01 tomato, chopped
  • shredded cheddar cheese
  • sour cream
  • salsa
  • 1/4 C lime juice
  • 1/4 C water
  • 02 Tbsp. olive oil
  • 03 tsp. red wine vinegar
  • 03 tsp. teriyaki sauce
  • 1/2 tsp. chili powder
  • 1/2 tsp. cayenne pepper
  • 02 tsp. garlic powder

Steak Fajitas Steak Prep

Place steak in a glass dish or plastic zip-loc bag.
Combine marinade ingredients.
Pour all but 1/4 C. marinade over steak and refrigerate 01 – 02 hours.
Reserve 1/4 C. marinade to stir-fry vegetables.

Add a little olive oil to a hot pan.
Fry onions and peppers with reserved marinade on high heat until tender.
Transfer to a plate.

Steak Fajitas Onions and Peppers

Add steak to the pan and cook until browned, about 01 minute per side.

Add steak, peppers, onions, chopped tomatoes, cheddar cheese, sour cream and salsa to a tortilla.

    • Thanks! It was really delicious! I would’ve added some guacamole too, but I didn’t have any. Let me know if you try it, and how you liked it. I just kind of made up the marinade recipe.
