This is one of those recipes I made up one night, after a few cocktails, using the few ingredients I had in the fridge. It turned out so good that I actually wrote it down, something I never used to remember to do. I hope you like it.
- 01 green pepper, cut in wedges
- grated parmesan cheese or slices of Muenster cheese
- olive oil
- 06 – 08 Kalamata olives
- 06 – 08 pimento stuffed green olives
- 1/4 onion, chopped
- 1/2 tomato, chopped
- 02 Tbsp. cream cheese
- 01 piece wheat bread, crumbled fine
- 01 Tbsp. sugar
- 01 tsp. garlic powder
- 01 tsp. cilantro
- 1/2 tsp. olive oil
Combine stuffing ingredients in a bowl.
Line a baking sheet with foil.
Rub green pepper wedges with olive oil.
Spoon stuffing onto each pepper wedge.
Place on pan and bake at 350 degrees for 30 minutes.
Sprinkle with parmesan or Muenster cheese and broil for 03 – 05 minutes.
I prefer to use slices of Muenster cheese in place of the parmesan for this recipe, but I didn’t have any on hand this time so I used grated parmesan instead.
