- 01 C Surimi (imitation crab)
- 1/2 C shredded mozzarella cheese
- 02 Tbsp. cream cheese
- 01 Tbsp. Worcestershire sauce
- 1/4 C onion, chopped
- 05 bread and butter pickle slices, chopped
- iceberg lettuce
- tomatoes, sliced
Combine first six ingredients in a bowl.
For the salad
Place iceberg lettuce and tomato slices in a bowl.
Add a scoop of crab salad in the middle.
Serve with your favorite dressing.
For the quesadillas
Heat a little olive oil in a pan.
Fry tortillas, one at a time, on each side until barely crisp. Set aside.
Add the surimi mixture to the pan and cook until cheese starts to melt, about one minute.
Flip mixture and cook for another minute or so.
Place mixture on heated tortillas, fold over and enjoy!
