Onion and Orange Marmelade Pork Chops

I found this recipe over at Lattes and Leggings. My chops were thin so I just pan fried them the whole way instead of finishing them off in the oven. These are super flavorful and delicious!

Onion and Orange Marmelade Pork Chops

Ingredients

Onion Orange Marmelade

02 Tbsp. olive oil
02 onions, sliced
01 Tbsp. balsamic vinegar
02 Tbsp. orange marmalade
01 1/2 tsp. dried rosemary
01 1/2 tsp. dried thyme
1/2 tsp. kosher salt
1/2 tsp. black pepper

Pork Chops

02 pork chops
01 Tbsp. minced garlic
01 tsp. dried rosemary
01 tsp. dried thyme
1/2 tsp. kosher salt
1/2 tsp. black pepper
01 Tbsp. olive oil

Directions

Onion Orange Marmelade

In a sauce pan, heat olive oil over medium high heat.
Add onions and saute for about 01 minute, stirring frequently.
Add remaining ingredient.
Reduce heat to low, cover pan and continue to cook for one hour, stirring occasionally.

Pork Chops

In a bowl, combine garlic, rosemary, thyme, salt and pepper.
Rub mixture on pork chops.
Cover and refrigerate for one hour.

Heat oil in a pan, on high heat.
Brown pork chops on both sides, about three to four minutes each.
Reduce heat to medium low, cover and continue to cook about 20 – 30 minutes or until no longer pink, turning half way through.

Serve with onion orange marmalade spooned over top.
