We just got back from vacation and had a boat-load of fresh tomatoes and banana peppers ripe on the vine waiting for us so I decided to make some salsa!
- 02 C fresh tomatoes, diced – I used Roma, Beefsteak and Hot House tomatoes
- 01 C fresh peaches, diced
- 1/4 C fresh banana peppers, diced
- 1/4 C yellow onion, diced
- 1/4 C red wine vinegar
- 02 Tbsp. lime juice
- 01 Tbsp. honey
- 01 Tbsp. cilantro
- 1/4 tsp. salt
- 1/8 tsp. pepper
Combine tomatoes, peaches, peppers and onions in a bowl.
Whisk the red wine vinegar, lime juice, honey, cilantro, salt and pepper in a separate bowl.
Pour sauce over the salsa and stir to incorporate.
Refrigerate at least one hour.
