Cheesy Bacon Potato Pancakes

What do you do with leftover potatoes? Make potato pancakes, of course! These are the ultimate with Mexican cheese and bacon bits for a little “pow”! My Honey topped his with a little hot sauce for an extra kick. Deeeeelicious!Cheesy Bacon Potato Cakes

Ingredients

  • 03 C mashed potatoes
  • 01 egg
  • 01 C Mexican cheese
  • 1/4 C bacon bits
  • 1/4 tsp. salt
  • 1/4 tsp. pepper
  • 1/2 tsp. garlic powder
  • butter for frying

Directions

Combine all ingredients together.
Melt about a tablespoon of butter in a non-stick frying pan on medium high heat.
Form patties or just drop a spoonful of mixture into the hot pan and fry until brown, about five minutes.
Flip and brown the other side.
Drain on paper towel.

    • It’s basically a combination of cheddar, colby jack and mozzarella. Plain cheddar would work great. I just didn’t have any on hand that day.
