Sweet Potato Casserole

Today is my Honey’s birthday so I made him this delicious casserole. It’s more like a dessert than a side dish, but it’s soooo… yummy!

Sweet Potato Casserole

Ingredients

Topping
  • 01 C pecans, chopped
  • 01 C brown sugar
  • 1/3 C flour
  • 02 Tbsp. butter, melted
Potatoes
  • 03 C sweet potatoes, cooked and mashed
  • 01 C sugar
  • 1/2 tsp. salt
  • 01 tsp. vanilla
  • 02 eggs, beaten
  • 04 Tbsp. butter

Directions

In a bowl, combine potatoes, sugar, vanilla, eggs and butter.
Mix completely.
Pour into a greased 08 x 08 baking dish.

In a separate bowl, combine pecans, brown sugar, flour and butter.
Sprinkle the pecan mixture over the top of the sweet potatoes.
Bake for 30 minutes.
