Dill Pickle Braised Chicken Thighs

I’m from Detroit. I love all things that are made in my city. One of those things is McClure’s pickles. They make garlic dill pickles, which are tangy and tart; and super spicy pickles… not to mention their delicious bloody mary mix! Here, I use the brine from both the spicy and garlic dill pickles to make this sumptuous chicken dish.  Note: This is not a sponsored post – I just love these pickles. 🙂Dill Pickle Braised Chicken Thighs



Place chicken and pickle juice in a ziploc bag and marinade for at least 01 hour.
Heat oil in a large Dutch oven.
Remove chicken from marinade, discard marinade, season chicken with salt, pepper, garlic powder and paprika.
Over medium high heat, brown chicken in oil on all sides.
Remove to a plate and tent with foil.
Add onions to the oil and brown about 3 minutes.
Add garlic and continue to brown with the onions about 3 more minutes.
Remove onion and garlic, and drain oil.
Return the onions, garlic and chicken to the Dutch oven.
Reduce heat to medium, add chicken stock, pickle juice, tomatoes, bay leaves and thyme and simmer for about 45 minutes.
Remove chicken and vegetables to a platter and tent with foil.
Discard bay leaves.
Whisk cornstarch and water together and add to the broth over medium high heat until thickened.
Pour gravy over the chicken and vegetables and serve with white rice, noodles or mashed potatoes.
