Glazed Bacon Meatloaf 3

Adapted from Food 52’s Grill-Roasted Meatloaf Recipe

Ingredients

Meat Loaf
  • 03 lbs. ground beef
  • 03 slices white bread
  • 01 egg
  • ¼ C milk
  • ½ Tbsp. chili powder
  • 01 tsp. dried thyme
  • 01 tsp. paprika
  • 01 tsp. kosher salt
  • 01 ½ tsp. black pepper
  • 03 dashes hot sauce
  • ½ Tbsp. Worcestershire sauce
  • 01 garlic clove, chopped
  • ½ onion, chopped
  • 06 – 08 slices bacon
Glaze
  • ½ C ketchup
  • ¼ C Dr. Pepper
  • 02 Tbsp. molasses
  • ½ tsp. ground pepper

Glazed Bacon Meatloaf 2

Directions

Beat the egg and milk together.
Tear bread into small pieces and soak in the milk mixture.
Add chili powder, thyme, paprika, salt, pepper, hot sauce and Worcestershire and stir to combine.
Add onions, garlic and ground beef and mix by hand.
Form into two loaves.
Cover each loaf with 03 – 04 slices of bacon.

Heat ketchup, Dr. Pepper, molasses and pepper in a small sauce pan on low for 05 – 08 minutes, until thickened.
Spoon glaze over each loaf, reserving about ½ of the glaze for basting.
Bake at 325 degrees for 01 ½ hours, or until internal temperature is 155 degrees, basting with more glaze every 30 minutes.
